Sage Tart Dough

Sage Tart Dough
2 ½ C. flour
8 oz. butter, very cold, cut into 6 pieces
1 tsp. salt, slightly rounded
½ C. ice water
3 Tbs. fresh sage leaves
1. Pulse flour and salt in food processor
2. Add butter one piece at a time and pulse until crumbly
3. Add water until dough forms a smooth ball. Do not overwork
4. Divide dough into 4 pieces add press sage leaves into the surface
5. Divide into 2.25 oz. portions and chill
