Sweet & Sour Pork

Marination:
250g pork, thinly sliced
1 tbsp cooking wine
½ tsp salt
½ tsp white pepper powder
1 tsp oyster sauce
100g potato starch
200g water
Glaze:
Sugar 50g
Rice vinegar 50g
Soy sauce 3g
Salt 1g
Starch water 2g
Water 10g
Upute
Marinate the pork slices with cooking wine, salt, oyster dauce and white pepper powder
Dilute the potatoe starch with water and let the starch settle down to the bottom. Pour out the water on the top layer and coat the meat with marination ingredients
Heat up a pot of oil to 350F, and put the pork slices individually. Fry until golden and crispy. Take it out. And heat up the oil to 350F, and re fry the pork again, really quick for about 30 seconds. Set aside.
Mix the ingredients for the glaze and pour into the same pan with oil scooped out. Sauté until sauce becomes thick and add in the crispy pork.
Fold into the glaze until well coated and add in shredded carrot and scallion for decoration
