Lemon Chicken

Marinate the chicken
450g of boneless skinless chicken breast
1 tbsp of shaoxing wine
1 tsp of sesame oil
1/2 tsp of baking soda
1/2 tsp of salt
1/8 tsp of pepper
1 tbsp of cornstarch
1 tbsp of cooking oil
Wet batter
1/2 cup of cornstarch
1 cup of All purpose flour
1 tsp of baking soda
1 cup of organic water
1/2 tsp of salt
Lemon sauce
3 cloves of garlic, minced
1 tsp of ginger, finely grated
1 tbsp of vegetable oil
1/4 cup of chicken stock
1/3 cup of lemon juice
2 tbsp of sugar
2 tbsp of honey
1/2 tbsp of cornstarch
Garnish:
Sesame seeds
Spring onions

Marinate the chicken with the ingredients above for at least 1 hour or overnight. Set aside.
For the wet batter, combine all purpose flour, cornstarch, baking soda, salt, organic water and mix.
Then, dredge your marinated chicken in the wet batter and shake off excess.
Heat up some oil in a large frying pan. Fry the chicken for 4-5 minutes or until golden brown. Set aside.
For the lemon sauce, combine all of the ingredients above and set aside.
In a pan, heat the oil over high heat. Add the garlic and ginger, sauté for 30 seconds.
Then, pour the sauce and continue stirring until the sauce has thickened.
Add the chicken to the pan and toss until it is evenly coated.
Serve the chicken with a bowl of rice, garnish with sesame seeds, spring onions and enjoy!
