Chocolate Mousse

Chocolate Mousse
6 oz chocolate (melt, double boiler)
4 T butter (add 1 T at a time)
pinch salt
1 t vanilla (add slowly)
2 T strong coffee or 4 t brandy or orange liquor
4 egg yolks (1 X 1 whisk)
4 egg whites in clean mixing bowl (double boiler to warm…1-2 mins)
beat to soft peaks add: 2T sugar beat on high to soft.
Add beaten whites…gently fold in
1/2 c whipped cream, beaten fold in
Chill 2 hours, to blend up to 24 hours then flavors disintegrate.
*I make this recipe 2x and I omit the cream or I add a small amount of cream.
