• 1-2 kg beef (in cubes)

• 1/4 cup flour (a little less)

• 1 tsp salt

• 1/2 tsp pepper

• 1/2 tsp Parsley

• 1 tsp Oregano

• 1 tsp Rosemary

Roux and Mire Poix

• 2 tbsp butter

• 1/4 cup flour

• 4 cloves of garlic (sliced)

• 2 stalks of celery (diced)

• 1 medium onion (diced)

Soup

• 3 tbsp tomato paste

• 1 tbsp red wine vinegar

• 1 cube of beef stock (or chicken)

• 1 cup of water (for dissolving stock)

• enough water to cover beef

• 2 bay leaves

• 5-6 potatoes (large cubes)

• 6-8 carrots (long strips)
