High-Protein Tomato Basil Soup

1 (24-oz) jar marinara sauce

1 cup low-sodium chicken broth

1½ cups cottage cheese

1 Tbsp olive oil

2 cloves garlic (crushed)

1 Tbsp Italian seasoning

salt and pepper (to taste)

3 Tbsp fresh basil

¼ tsp red pepper flakes (or to taste)

Upute

Heat olive oil over medium heat in a Dutch oven or large pot. Add garlic and cook until fragrant.

Add marinara sauce, Italian seasoning, chicken broth, salt, and black pepper to the pot and bring to a boil.

Reduce to medium-low heat and simmer 25 minutes, until hot. Add cottage cheese to the pot and use an immersion blender to blend the soup until smooth.

Stir in fresh basil leaves and add a dash of red pepper flakes.
