Japanese Curry with Beef

12 ounces beef, cubed (I used a mixture of stew meat and ribeye)
2 small onions
2 large carrots
3 small potatoes
3 cloves garlic
1 tbsp oil
Salt & pepper to taste
3 1/2 cups water
1 package Japanese curry (Vermont or Golden House are the most popular brands)
Dash of Worcestershire (optional)
1 tbsp soy sauce
Cooked rice for serving
Minced parsley for garnish (optional)

Peel, halve, and slice the onions into 1/4 inch thick strips. Dice the peeled carrots and potatoes into 1/2 inch cubes. Mince the garlic.
Pat the beef dry and season with salt and pepper.
Heat 1 tbsp of oil in a large pot over medium high heat. Sear the cubed beef for about 2 - 3 minutes on each side until browned. Remove with a slotted spoon and set aside.
Reduce the heat to medium. In the same pot, add the onion and saute for 8-10 minutes until browned and partially softened. Add the carrots, potatoes, and garlic to the pot and saute for another couple minutes, stirring occasionally. Season with salt to taste.
Return the beef to the pot and add the 3 1/2 cups of water. Bring to a boil and skim off any foam that floats to the top. Cover, reduce the heat to medium-low, and simmer for 30 - 40 minutes or until the beef and vegetables are tender.
Add the curry cubes to the pot and mix well to fully dissolve. Add the soy sauce and Worcestershire (optional) and stir.
Serve with hot rice and garnish with parsley or desired toppings.
