High Protein Ranch Jalapeño Cottage Cheese Chicken Bowls

Ingredients (serves 2)

1 cup low-fat cottage cheese, blended

2 tbsp Greek yogurt

4–6 oz cooked shredded chicken

1 tsp ranch seasoning

1 cup diced zucchini or cucumber

2 tbsp diced jalapeños

¼ cup cauliflower rice or bell pepper

1 oz shredded pepper jack

Toppings: green onion, avocado, black pepper, lime

How to Make it

Blend cottage cheese and Greek yogurt until creamy. Stir in chicken, ranch seasoning, jalapeños, zucchini, and cauliflower rice. Divide into bowls, top with pepper jack, and heat until melty. Add toppings before serving.
