Spicy Watermelon Cucumber Salad

450 g (3 cup) watermelon (diced)

2 Persian cucumbers (diced)

1 ripe avocado (diced)

150 g (1 cup) black grapes (halved)

1 red onion (thinly sliced)

1 handful of fresh mint (chopped)

3 tbsp sesame oil

1 tbsp crispy chili oil

2 tbsp soy sauce

1 tbsp rice vinegar

1 lime, juiced

1 tbsp honey

2 garlic cloves (pressed)

3 tbsp toasted sesame seeds

Prepare the salad ingredients: In a large bowl, combine diced watermelon, cucumbers, avocado, halved grapes, sliced red onion, and chopped mint leaves.

Toast sesame seeds: Heat a dry skillet over medium heat. Add sesame seeds and toast for 3–5 minutes, shaking the pan frequently until golden and fragrant. Remove from heat.

Make the dressing: In a small bowl, whisk together sesame oil, crispy chili oil, soy sauce, rice vinegar, lime juice, honey, and pressed garlic. Immediately stir in the hot toasted sesame seeds to bloom the flavors.

Combine: Pour the dressing over the salad ingredients. Gently toss everything together, taking care not to mash the avocado.

Serve immediately for best freshness and texture.
