Dongpo Pork

Sastojci

800g Pork belly

20ml Dark soy sauce

40ml Light soy sauce

150ml Rice wine

40g Crystal sugar

1 Scallion (or one bunch of spring onions)

3-4 Ginger slices (medium sized ginger)

Water

Note: serve with some greens of choice and rice

Upute

  1. Boil the pork from cold water: when water starts boiling do a timer for 2 minutes and then remove the meat from the water & drain

  2. Cut the pork into cubes roughly 4-5cm

  3. Place scallions and ginger on the bottom of the pot

  4. Place pork in pot with skin facing down (in a smaller pot have them circling the center)

  5. Add soy sauce, rice wine and crystal sugar and water to cover the pork (if the pork is not covered add extra of each liquid ingredient)

  6. Close and lock the lid, select beef/lamb function on cooker and cook for 40 minutes (extra liquid cook for 60 minutes)

  7. When time is up slowly release pressure and then remove the lid and turn the pork over so the skin is facing up

  8. Thicken the sauce either the old fashioned way or with the sauce thickening function until it forms a glaze

  9. Dongpo Pork is ready to eat
