Butternut Squash Gnocchi

Butternut Squash Gnocchi
4 cups roasted butternut squash or sweet potato
½ cup + 2 Tablespoons semolina flour
10 Tablespoons boiling water
2 eggs
½ cup parmesan
1 tsp. salt
½ tsp fresh nutmeg
1 ½ cup flour
1. roast squash
2. bloom the semolina in the water, can mix with fork
3. add semolina, parmesan, squash (may add in two parts), salt and nutmeg to food processor and blend well.
4. stir in the flour by hand
place contents into pastry bag and pipe in thick line across plastic wrap – roll and tie ends securely
6. in shallow pan of boiling water, cook in batches of roughly 3 logs at a time for 10-12 minutes each
7. allow to cool before cutting into gnocchi segments
