100g active sourdough starter

325g water

500g bread flour

10g salt

Dough

Mix sourdough recipe and let it bulk ferment like normal.

Preheat oven at 230°C (450°F).

Divide the dough into small pieces, about 70-75g each, and shaped them into tight little rounds.

Place each ball into a lightly greased muffin tin, seam-side down. Score the tops and give a light spray of water.

Bake

Cover the pan with another muffin tin, bake at 230°C (450°F) for 15 minutes

Uncover, bake another 10 minutes until deeply golden
