Strawberry Salad With Grilled Chicken & Balsamic Vinaigrette

Main salad ingredients:
1 lb chicken breast
6 cups lettuce mix of choice (I love arugula + spring mix for this)
1 pack strawberries
1/4 red onion sliced
1/2 cup raw chopped walnuts
1 pack of goat cheese
2 mini cucumbers
1/4 cup fresh mint
balsamic dressing:
1/2 cup extra virgin olive oil
1/2 cup balsamic vinegar
1 tbsp dijon mustard
1 tbsp honey
2 cloves of garlic
1/2 tsp dried oregano
salt & pepper
Upute
First make the balsamic dressing - add all ingredients to a blender or food processor and pulse together. Then trim your chicken breasts and add to a ziplock bag or tupperware with half of the balsamic dressing and an extra 1/4 cup balsamic vinegar to marinate. Add to the fridge for at least 20 minutes until you’re ready to grill. Save the rest of the dressing for serving.
Once you’re ready to cook everything else - preheat the oven to 350 degrees for the walnuts. Add walnuts to a baking sheet and toast in the oven for 5 ish minutes - check often as they will burn quick!
When you’re ready to grill - heat greased grill to medium/high heat. Add the chicken and cook for 5-7 minutes on each side with the grill closed, or until chicken reaches internal temp of 165 degrees.
Finally, prep the rest of the salad ingredients - get lettuce out and chop the strawberries, red onion, cucumber, mint, and crumble your goat cheese. Remove chicken from the grill and let rest for a few minutes before slicing.
To assemble - I like to lightly dress the greens on their own first to make sure they are coated without mashing the fruit/toppings. Then add the greens to serving bowls with the strawberries, cucumbers, red onion, walnuts, mint, goat cheese, sliced chicken and extra dressing.
