Shrimp Pad Thai

Soak noodles 30 min (soft but firm).
Stir-fry garlic → add shrimp → cook 1–2 min.
Push aside, scramble eggs.
Add noodles + sauce. Toss quickly.
Add sprouts & spring onion.
Finish with peanuts + lime.
Flavor balance: sweet, sour, salty, slight smoky.
Drunken Noodles (Pad Kee Mao)
Spicy street-style noodles.
Ingredients
Wide rice noodles – 300 g
Chicken or shrimp – 300 g
Garlic – 3 cloves
Fresh red chili – 2–3
Thai basil – 1 cup
Onion – 1 sliced
Bell pepper – 1
Sauce
Oyster sauce – 2 tbsp
Soy sauce – 1½ tbsp
Dark soy – 1 tsp
Fish sauce – 1 tbsp
Sugar – 1 tsp
Method
High heat wok.
Fry garlic + chili.
Add protein → cook fast.
Add vegetables.
Add noodles + sauce.
Toss hard for slight char.
Add Thai basil at end.
Must be spicy & slightly smoky.
