750g lean beef mince
2 onions, finely diced
3 carrots, finely diced
2 celery sticks, finely diced
4–5 garlic cloves, crushed
2 heaped tbsp tomato purée
2 × 400g chopped tomatoes
500ml beef bone broth @oxo_uk #gifted
150ml milk
150ml red wine (or extra broth)
2 tsp oregano
1 tsp basil
1 tsp smoked paprika
2 bay leaves
Salt & pepper
500–600g dried spaghetti
Parmesan to serve

Dry fry onions, carrots & celery over medium heat for 8–10 mins until soft and caramelised.
Add mince, brown really well and season. Stir through garlic & tomato purée for 2 mins.
Pour in wine, reduce for a few minutes, then add chopped tomatoes, bone broth, milk, herbs & bay leaves.
Simmer uncovered for 60–90 mins until thick, rich and glossy.
Boil spaghetti, toss through the sauce and finish with parmesan.
