Savory Herb Flan

Savory Herb Flan yield: 30
16 large cloves garlic, sliced
2 c. chicken or veggie stock
2 T. butter
3 c. whole milk
2 c. heavy cream
2 2” rosemary
3 sage
6 3” thyme
4 fresh bay leaves
4 eggs
4 yolks
1 tsp. salt
½ t. white pepper
Crispy Shallot Garnish
4 large shallots
1 c. flour
2 qts. olive oil
salt
fry at 300
1. combine garlic, stock and butter; simmer until completely reduced (approx. 20 min.)
2. add milk and cream to the reduction to warm
3. add herbs, cover, and steep for at least 30 min.
4. strain with ultrafine strainer
5. preheat oven to 325
6. add eggs, salt, and pepper, beat with a whisk
7. fill large pan with 1” hot water
8. using 12 buttered rammekins, add 4 oz. to each.
9. bake until set, yet still “jiggly”, approx.25-30 min.
10.remove from oven, let sit in bath for approx. 10-20 min.
11.sprinkle crispy shallot garnish on top
