Ingredients (Serves 3–4)
For the salad:
2 cups cabbage, finely shredded (green, purple, or mix)
1 cup cooked or canned chickpeas (drained & rinsed)
1 cup shelled edamame (cooked)
1 medium carrot, grated
2 tbsp green onions, chopped
2 tbsp fresh cilantro (optional)
For the sesame dressing:
2 tbsp sesame oil
1 tbsp soy sauce
1 tbsp rice vinegar (or lime juice)
1 tsp honey or maple syrup
1 tsp grated ginger
1 clove garlic, minced
1–2 tbsp water (to thin, as needed)

Step 1: Prep Ingredients
Shred cabbage finely for better texture
Cook edamame (if frozen), then cool
Rinse chickpeas well
Grate carrot and chop herbs
Assemble Salad
Step 2: Combine
In a large bowl, mix:
Cabbage
Chickpeas
Edamame
Carrot
Green onions
Cilantro
Make Dressing
Step 3: Whisk
In a small bowl, combine:
Sesame oil
Soy sauce
Rice vinegar (or lime juice)
Honey/maple syrup
Ginger
Garlic
Add water gradually until smooth and pourable
Finish
Step 4: Toss
Pour dressing over salad
Toss well to coat evenly
