Preserved Lemon Garlic Pasta

Summer simplicity at its best.

Cook 200g pasta until al dente. Finely dice ½ Sandhurst Preserved Lemon and thinly slice 2 garlic cloves.

Upute

In a large pan over medium heat, add 1 tablespoon olive oil and 1 teaspoon butter.

Sauté the garlic until fragrant, then add the preserved lemon and ½ teaspoon chilli flakes.

Transfer the pasta straight into the pan with 2 tablespoons of the pasta cooking water.

Toss until glossy and well coated. Finish with chopped parsley and extra preserved lemon on top.

Light, citrusy and perfect for warm summer days.
