Strawberry Hotcakes

Dry Mix Wet Mix

4 c. flour 6 oz. melted butter

4 tsp. powder 2 c. ricotta

2 tsp. baking soda 1 ½ c. milk

1 tsp. salt 4 egg whites, beat until stiff

½ c. sugar 4 egg yolks, beat

4 lemons, zested

(sliced strawberries in lemon juice and sugar should be ready prior to orders)

1. combine dry mix ingredients and sift thrice.

2. combine wet mix ingredients in separate bowl.

3. add dry mix to wet mix.

4. 6 slices of strawberry should be placed in each pancake amidst cooking
