The Very Best Carrot Cake Ever (I Promise)

Cake
• 2 C. sugar
• 1 1/2 C. oil
• 4 eggs
• 1 C. flour
• 1 C. wheat flour
• 2 tsp. baking soda
• 1 tsp. salt
• 1 Tbsp. cinnamon
• 2 tsp. vanilla extract
• 3 C. carrots, grated
• ¾ C. pecans, chopped
• 1C. raisins
• ½ C. crushed pineapple or applesauce
• 3/4 C. coconut
Cream Cheese Frosting
• ½ C. salted butter or margarine, room temperature
• 18-oz. pkg. cream cheese, room temperature • 1lb. powdered sugar
• 1-2 tsp. vanilla extract

Cake Directions
1 In a mixing bowl, combine sugar and oil. Add eggs and mix well.
2 Sift flours, soda, salt, and cinnamon together. Add to sugar mixture and beat well.
3 Add vanilla and grated carrots.
4 Fold in nuts, raisins, pineapple, and coconut.
5 Grease and flour three 8-inch layer cake pans.
6 Pour batter evenly into pans and bake at 325 degrees for 45 minutes.
7 Cool on racks for 10 minutes and remove from pans to continue cooling.
8 Frost with cream cheese frosting.
** I baked 57 minutes **
Cream Cheese Frosting Directions
1 In a mixing bowl, beat butter and cream cheese together.
2 Add sugar and vanilla extract until frosting is of spreading consistency.
