🥬 GF Spinach Casserole

2 boxes chopped spinach, cooked and drained (or 20 oz fresh)
8 oz pkg block cheese, grated. (I like sharp cheddar or Vermont white) Mix half/half if like
3/4 cup sour cream
4 oz cream cheese (Philadelphia), room temp/softened
1/4 c milk, half-n half or cream
1 egg, beaten (add last)
Salt and pepper to taste
1/4 c GF bread crumbs or crushed crackers.
Parmesan cheese sprinkled on top. (Optional)
Upute
Drain cooked spinach very well
Add and mix with all other ingredients, saving the beaten egg for last.
Pour into round Pyrex dish (or any other 9 inch dish
Place a few small pats of butter on top.
Cover with crackers or crumbs.
Bake, uncovered, 45 mins at 350
Bilješke
To take this up a notch use fresh spinach, sautéed in olive oil, butter and fresh garlic. Drain completely before adding to other ingredients.

If you don’t need it to be GF use Pepperidge Farm herb seasoned stuffing/breadcrumbs
Grandmama’s recipe called for cream of mushroom or celery and 2 beaten eggs. No cream cheese.
