Ingredients:

3.5ish lb turkey

10.5oz low-fat cottage cheese

5oz low-fat cream cheese

1oz grated Parmesan cheese

3.5oz mozzarella cheese

.25 c low-fat milk

15 lasagna sheets

7.5oz tomato puree

10oz beef stock (made with 1 Knorr beef cube)

1 onion, finely diced

2 carrots, grated or finely chopped

3 garlic cloves, chopped

1 tsp salt

½ tsp black pepper

1 tsp dried mixed Italian herbs for white sauce

Optional: fresh parsley or basil for garnish

Upute

Method:

1. Preheat your oven to 180°C (fan) / 200°C (conventional).

2. Spray a large pan with a little oil or low-calorie spray. Sauté the diced onion, grated carrots, and minced garlic over medium heat for 4-5 minutes until soft. Add the beef mince and cook until browned (about 8-10 minutes), breaking it up as it cooks. Season with salt and pepper

3. Add the tomato purée, passata, and beef stock to the pan. Lower the heat and simmer for 15-20 minutes, allowing it to thicken.

4. Blend the White Sauce using blender, combine the low-fat cottage cheese, low-fat cream chees, low-fat milk, grated Parmesan and Italian herbs, Blend until smooth

5. In a large baking dish, begin layering, Spoon a layer of meat sauce, Add a layer of lasagna sheets, Spread a layer of the blended white sauce and sprinkle some cheese. Repeat layers again finishing with a layer of white sauce on Sprinkle the remainder mozzarella evenly over the top.

6. Cover with foil and bake for 25 minutes. Remove foil and bake for an additional 10 mins, until golden and bubbling.

In served with some veggies and home made fries.
