Kumquat Skirt Steak Marinade

Kumquat Skirt Steak Marinade
15 oz. kumquats
¾ c. balsamic vinegar
¾ c. soy sauce
6 T. brown sugar
3 T. honey
6 T. pickled green peppercorns in brine
3 T. black peppercorns
3 T. garlic
4 ½ tsp. salt
¾ c. chopped green onion
¾ c. chopped cilantro
Skirt steak marinade continued
Partially pulse kumquats, remove
cook in small saucepan with balsamic vinegar, soy, sugar and
honey: 5 min. until reduced
Process peppercorn and salt until fine chopped (don’t puree)
add green onion & herbs
rub all over meat, at least 2 hrs., max 8 hours
1. Partially pulse kumquats in food processor
2. Combine kumquats, balsamic vinegar, soy sauce, sugar, and honey in small saucepan, reduce (approx. 5 min)
3. Finely chop peppercorns and salt
4. Mix in salt, pepper, green onion and herbs
5. Rub marinade into steak (min. 2 hours, max. 8 hours)
