Nikita’s Bread

Sastojci

3 cups flour

2 cups warm water (1 part boiled hot two parts cold)

2 tbsp active dry yeast

1 tbsp salt (depending on your salt add more or less)

Upute

Mix 2 cups of flour, yeast and salt in a large bowl. Add water and mix it in with a spoon to hydrate. Do not over mix it, but make sure it turns into consistent paste. Add the third cup of flower and mix it in as well, but don't over mix, otherwise it'll be too dense. Cover with a lid for 2 hours, but make sure there is enough room for it to rise.

At 1h45m of proofing preheat the oven with a dutch oven in it (with the lid on) and a splash of olive oil on the bottom. At 2 hours, gently pour the dough out of the bowl onto a floured surface. Pick up sides with a knife or a spatula and fold them in to the center. Don't press or kneed.

Take the dutch oven out and remove the lid. Once folded, lift up the dough and drop it in the center of the Dutch oven - folded side down. Cover with the lid.

Put the dutch oven in the oven for 30-35 minutes. Once done - remove the lid and leave for another 15-20 minutes. At that point - remove the dutch oven, take out the bread, wrap it in a kitchen towel and leave on the counter for 20-30 minutes to cool. Important to not cut it right away, the inside will continue to cook while wrapped up. Either keep in the towel to keep it crispy or put it in the bread bag to finish cooling off and steam to soften the crust. Enjoy.
