CARNE EN SU JUGO INGREDIENTS:
2.5 - 3Lb Carne
1 lb bacon
7 chiles gueros (yellow peppers)
5 green onions • 2 1/2 lbs carne ranchera
Blend seasoning (black pepper, salt and garlic salt
For the salsa:
1 1/2 Ibs tomatillo
5 chiles serrano
2 cups of water (from where we boiled greens)
Small bunch of cilantro
1/4 small white onion
6 garlic cloves
2 tbsp chicken bouillon
To serve:
Some frijoles de la olla (made separately to your liking)
cilantro
white onion

over medium high heat, fry bacon until crispy 10-12 min. Remove and keep bacon oil
in the same oil, sauté the green onions and Chile gueros for about seven minutes.
drain most of oil, and then begin to cook your carne after seasoning it. cook & mix for a few minutes, and then add the lid. Remember the point is to seal it in its own juices.
in the interim, cover your tomatillos & serrano peppers in a pot w/ water & boil for about 10 minutes. You just want them to change color, but not get too soggy, or else it will make it very bitter
Add those to blender along with the onion, garlic cloves, and cilantro Bunch, +2 cups of the boiled water
blend till nice and smooth, then add it to your carne. also add back in the Chile and green onions, along with 2/3 of the bacon
* if you want extra spice, add three large jalapeños with slits and leave them in for the cooking process
Cook for another 20 minutes or so, and then serve with frijoles, bacons & onions/cilantro
