CARNE EN SU JUGO INGREDIENTS:

  • 2.5 - 3Lb Carne

  • 1 lb bacon

  • 7 chiles gueros (yellow peppers)

  • 5 green onions • 2 1/2 lbs carne ranchera

  • Blend seasoning (black pepper, salt and garlic salt

For the salsa:

  • 1 1/2 Ibs tomatillo

  • 5 chiles serrano

  • 2 cups of water (from where we boiled greens)

  • Small bunch of cilantro

  • 1/4 small white onion

  • 6 garlic cloves

  • 2 tbsp chicken bouillon

To serve:

  • Some frijoles de la olla (made separately to your liking)

  • cilantro

  • white onion

  • Radish

Upute

  • over medium high heat, fry bacon until crispy 10-12 min. Remove and keep bacon oil

  • in the same oil, sauté the green onions and Chile gueros for about seven minutes.

  • drain most of oil, and then begin to cook your carne after seasoning it. cook & mix for a few minutes, and then add the lid. Remember the point is to seal it in its own juices.

  • in the interim, cover your tomatillos & serrano peppers in a pot w/ water & boil for about 10 minutes. You just want them to change color, but not get too soggy, or else it will make it very bitter

  • Add those to blender along with the onion, garlic cloves, and cilantro Bunch, +2 cups of the boiled water

  • blend till nice and smooth, then add it to your carne. also add back in the Chile and green onions, along with 2/3 of the bacon

  • * if you want extra spice, add three large jalapeños with slits and leave them in for the cooking process

  • Cook for another 20 minutes or so, and then serve with frijoles, bacons & onions/cilantro
