SPICE CAKE - EXCELLENT

2 C Granulated sugar

1/2 C Shortening

2 Eggs

3 C Cake Flour

1 tsp Salt

1 tsp Baking Soda

1 tsp Cinnamon

1 tsp Nutmeg

1 Tbsp Cocoa Powder

1 1/2 C Sour Milk OR Buttermilk (See Notes)

1 tsp Vanilla

1 C Walnuts - chopped

Cream sugar and shortening.

Add eggs and beat.

Sift flour with all dry ingredients and add to creamed mixture along with milk.

Add vanilla and nuts.

Pour into 2 greased and floured 9 inch cake pans OR into 1 greased and floured 9" X 13" pan. (Mom always used the 9" X 13" pan for this cake.

Bake at 350F for 30 to 40 minutes, or until done.

To make sour milk, add 1 tablespoon of lemon juice or white vinegar to 1 cup of regular milk and stir. Let the mixture sit at room temperature for 5-10 minutes until it thickens and begins to curdle slightly. This acidified milk is a great substitute for buttermilk in many recipes.
