Pickled Turnips

Pickled Turnips
1 lb turnips, trimmed and peeled
Brine:
2 t pickling salt
1 1/2 c water
Brine scored turnips for 30 mins - 1 hour then drain.
Combine 1 T minced chili pepper (jalapeno), 3 T sugar and 1 1/2 c rice vin, and pour
over turnips. Cover and refrigerate.
Try:
Fennel with chili
Romanesco with green peppercorn
Carrot with caraway
Cauliflower with green peppercorn
Chanterelles didn't work very well; they were too salty
