Caramel Apple Bread Pudding
yield: 9 (4 oz. ea.) buttered ramekins
fruit:
1 ¾ # 5 mixed variety apples, small chunks
1 oz. butter
1/3 cup apple juice
2 tsp. lemon juice
slightly over ¼ cup sugar
1. saute all ingredients until all liquid is absorbed and apples are soft and glossy
2.distribute contents evenly among the 9 ramekins
bread: 9 oz. small diced bread (½ challah, ½ sourdough), distribute among the ramekins
custard: *preheat oven to 350°F
2/3 cup sugar
2/3 cup water
1 ½ cup cream
3 cups whole milk
5 egg yolks
4 whole eggs
1. cook sugar and water until amber
2. whisk in cream
3. add milk
4. whisk into all eggs
5. strain
6. add 3 oz custard to each ramekin, allow to soak at least 30 minutes
7. bake ramekins 30 minutes
8. mix 1 ½ Tablespoons sugar with ¼ tsp cinnamon and ¼ tsp ginger, then sprinkle over custards and bake 10-12 minutes more
