Strawberry Mousse
2 c quartered strawberries
1/4 c sugar
2 t lemon juice
Mash
1 1/2 t
3 T water
In saucepan, rain gelatin over water and allow to sit one minute. Warm over low heat
until dissolved.
Combine gelatin with mashed berries and set in bowl over ice. Stir frequently until it
looks gelled, about 5 mins.
Whip 2/3 c cream until stiff. Fold into gelled berries with 1/2 diced strawberries.
