Honey Garlic Meatball Rice Bake

For the Meatballs:
1 lb 450g ground beef (or half beef, half pork)
½ cup breadcrumbs
¼ cup grated Parmesan cheese
1 large egg
2 cloves garlic minced
½ tsp salt
¼ tsp black pepper
1 tsp dried oregano
For the Rice & Sauce:
2 cups cooked white rice or brown rice
1 tbsp olive oil
2 cups broccoli florets optional, steamed
½ cup onion diced
3 cloves garlic minced
Honey Garlic Sauce:
⅓ cup honey
⅓ cup soy sauce
2 tbsp ketchup
1 tbsp rice vinegar or apple cider vinegar
1 tsp sesame oil
1 tsp cornstarch mixed with 2 tsp water

Preheat Oven
Preheat your oven to 375°F (190°C).
Lightly grease a 9×13-inch baking dish.
Make the Meatballs
In a bowl, combine ground beef, breadcrumbs, Parmesan, egg, garlic, salt, pepper, oregano.
Roll mixture into 1–1.5 inch meatballs.
Place meatballs on a parchment-lined baking sheet and bake 12–15 minutes until lightly browned (they’ll finish cooking in the casserole).
Prepare Rice & Veggies
Cook rice according to package instructions.
Steam broccoli if using.
In a skillet, heat olive oil and sauté onion and garlic until soft.
Make Honey Garlic Sauce
In a small saucepan, whisk together honey, soy sauce, ketchup, vinegar, sesame oil.
Bring to a simmer over medium heat.
Stir in cornstarch slurry and cook until thickened (1–2 minutes). Remove from heat.
Assemble the Casserole
Spread cooked rice in the greased baking dish.
Add sautéed onions, garlic, and broccoli.
Nestle baked meatballs on top.
Pour honey garlic sauce evenly over the meatballs and rice.
Bake
Cover with foil and bake 15 minutes.
Remove foil and bake 5–10 minutes more to allow sauce to bubble and caramelize slightly.
Serve
Let rest 5 minutes before serving.
Garnish with sesame seeds or chopped green onions if desired.
