Bechamel Sauce

Bechamel Sauce yield: 2 quarts
1 small onion
4 oz butter
sprig of thyme
1 tsp. salt
8 cups whole milk
½ cup flour
white pepper, cayenne, nutmeg to taste
1. Sweat 1 small onion, 4 oz butter & a sprig of thyme until soft- heat low and covered
2. Warm 8 C. whole milk and 1 tsp. salt
3. Whisk in ½ C. flour and cook for 1 minute
4. Whisk in milk
5. Heat low until thick and smooth
6. Strain
7. Season with salt, white pepper, cayenne & nutmeg to taste
1. Sweat onion, butter, thyme and salt until soft; cook covered on low heat
2. Warm whole milk
3. Whisk in flour and cook for 1 minute
4. Whisk in milk
5. Heat low until thick and smooth
