CHOCOLATE MARSHMALLOW FUDGE - GRANDPA VAN'S

90 Gm Unsweetened Chocolate (not cocoa powder)(3 Squares)
396 Gm Granulated Sugar
40 Gm Corn Syrup
1/2 tsp Diamond Crystal Salt
226 Gm Evaporated Milk (Pet brand preferred)
1 tsp. Vanilla
43 Gm Marshmallows (small)
Upute
Melt chocolate in double. boiler.
Add sugar, salt, and corn syrup and mix well.
Add milk and blend well.
Cook rapidly until sugar is dissolved, stirring constantly.
Reduce stove temp and cook slowly to 236F (soft ball stage).
Cool without stirring until the hand can be held comfortably on the bottom of the pan. (!)
Add vanilla and beat vigorously until thick and creamy.
Add marshmallows and put in greased pan.
Cut into squares when thoroughly cool
Cook in 2 qt. saucepan.
Cook rapidly and stir frequently until sugar is dissolved, then slowly WITHOUT stirring.
Cool before beginning to beat to prevent sugaring.
"A wooden spoon is best for stirring"
Cooling hot candy mixture is facilitated by setting pain in cold water, changing the water when it becomes warm. DO NOT STIR OR SHAKE THE PAN
Candy is ready to beat when the hand may be held on the bottom of the pan with comfort (about 135F).
