Thai Inspired Shrimp Salad

Sastojci

1 tb olive oil

1 large jalapeno, seed removed and finely chopped

2 cloves garlic, mashed

1 lb raw shrimp, peeled and deveined

1 lime

3 cups green cabbage, finely shredded

1/2 cup carrots, sliced thin

1 bunch green onions, finely sliced

1/4 red onion, finely sliced

1/4 cup mint, finely chopped

1/2 cup roasted peanuts, chopped

Creamy peanut ginger dressing

1/2 cup creamy peanut butter

2 tb sesame oil

2 tb maple syrup

2 inch knob fresh ginger (or 1 tb ground)

1 lime, juiced

1/4 cup low sodium soy sauce or coconut aminos

2 cloves garlic

First, prepare the dressing. In a blender, add all of the dressing ingredients. Blend until creamy. Taste and adjust seasonings if needed and set aside. Next, prepare the shrimp. Add oil to a skillet over medium heat. Add jalapenos and garlic. Sauté for 2-3 minutes, then add the shrimp. Keep sautéing until the shrimp is cooked through (not translucent). Set aside. Finally, build the salad. In a large bowl, add shredded cabbage, carrots, green onions, red onion, mint and chopped peanuts. Top with cooked shrimp. Pour dressing on top. Toss and enjoy!
