Mozzarella Cajun Chicken Tortellini with Garlic Velveeta Cre

1½ lbs boneless, skinless chicken breasts, cut into thick strips
1 tablespoon Cajun seasoning
1 teaspoon garlic powder
½ teaspoon paprika
Salt and pepper to taste
2 tablespoons olive oil
3 tablespoons unsalted butter
4 garlic cloves, minced
¾ cup heavy cream
1¼ cups Velveeta cheese, cubed
1 cup shredded mozzarella cheese (plus more for topping)
⅓ cup freshly grated Parmesan cheese
1 (20 oz) package cheese tortellini
¼ cup reserved pasta water (if needed to thin the sauce)
Fresh parsley, chopped (optional, for garnish)

Bring a large pot of salted water to a boil. Add the cheese tortellini and cook according to package instructions until al dente. Drain and set aside, reserving ¼ cup of the pasta water.
Season the chicken pieces generously with Cajun seasoning, garlic powder, paprika, salt, and pepper. Toss well to coat evenly on all sides.
Heat the olive oil in a large skillet over medium-high heat. Add the seasoned chicken and sear for 5–6 minutes per side, or until golden brown, cooked through, and crispy on the edges. Remove from skillet and set aside.
In the same skillet, melt the butter over medium heat. Add the minced garlic and sauté for about 30 seconds, just until fragrant.
Pour in the heavy cream and bring to a gentle simmer. Stir in the Velveeta cubes and continue stirring until fully melted and smooth.
Reduce heat to low and add the shredded mozzarella and Parmesan, stirring until the sauce becomes thick, velvety, and stretchy. If needed, add a splash of the reserved pasta water to loosen the sauce slightly.
Add the cooked tortellini to the cheese sauce, tossing gently to coat every piece. Let the pasta soak in the sauce for a couple of minutes over low heat, allowing it to thicken and cling luxuriously.
Sprinkle extra mozzarella on top and cover the skillet with a lid for 1–2 minutes, just until the cheese melts and forms gooey strands.
Plate by placing the creamy tortellini on one side of the plate and arranging the seared Cajun chicken strips on the other side. Spoon over extra sauce from the skillet to form creamy pools at the base of the pasta and garnish with chopped parsley if desired.
