High Protein Fiesta Beef & Potato Bowl

600g (about 4 medium) russet potatoes, cubed

1 tsp garlic powder

1 tsp smoked paprika

Salt & pepper to taste

Olive oil spray

Beef

1½ lb (680g) lean ground beef (93/7 or leaner)

1 small onion, diced

1 packet (28g) low-sodium taco seasoning (or homemade)

¼ cup (60ml) beef bone broth

Toppings

½ cup fresh guacamole

½ cup pico de gallo

Pickled jalapeños (optional)

Fiesta Sauce ll

½ cup (113g) non-fat Greek yogurt

1 chipotle pepper in adobo + 1 tsp adobo sauce

½ roasted red bell pepper (or 2 jarred pieces)

1–2 tbsp lime juice

½ tsp honey (or agave)

Handful fresh cilantro

Pinch of salt

Blend until smooth and bright

Air fry or roast potatoes at 425°F (220°C) with garlic, paprika, salt, pepper + oil spray until crispy (20–25 min).

Brown beef + onion. Stir in taco seasoning + bone broth, simmer 3–4 min.

Build bowls: potatoes → beef → guac + pico → jalapeños.

Drizzle with Fiesta Sauce for that money shot.
