Spicy Chipotle Mayo

½ cup mayonnaise (regular, light, or vegan)
2 tbsp sour cream (or Greek yogurt as a substitute)
2-3 chipotle peppers in adobo sauce
1 tbsp adobo sauce (from the canned peppers)
1 tbsp fresh lime juice
½ tsp smoked paprika
½ tsp granulated garlic

Blend the Ingredients: In a small bowl, add mayonnaise, sour cream (or Greek yogurt), chipotle peppers, adobo sauce, lime juice, smoked paprika, and granulated garlic.
Blend until Smooth: Using an immersion blender on low speed, pulse a few times until the mixture is smooth, or until it reaches your preferred consistency. If you don't have an immersion blender, you can use a food processor or blender.
Rest for Flavor: Let the mayo rest for at least an hour before serving to allow the flavors to meld together.
Adjust Spice Level: If you’re concerned about the heat, start with 1 or 2 chipotle peppers and taste the mayo before adding more.
Serving Suggestions:
This spicy chipotle mayo is perfect for dipping French fries, sweet potato fries, air-fried tater tots, or roasted veggies. It's also excellent as a spread on burgers, sandwiches, or wraps.
Storage:
Store in an airtight container in the refrigerator for up to 2 weeks. This mayo cannot be frozen as it may separate.
Notes:
To make a vegan version, simply swap the mayonnaise for a plant-based option.
If the mayo is too spicy, reduce the number of chipotle peppers or dilute with more mayo.
