Creamy Tuscan Chicken

6-8 Chicken Breasts (thin sliced)
3 tsp Garlic (or 6 cloves minced)
1 Onion (diced)
2 Tomatoes (diced)
16-20oz Spinach
1 Quart heavy cream
16oz Parmesian (and/or Asiago, romano, or italian blend)
1/4 tsp Salt and Pepper (to taste)
Serve with Noodles or Rice or Potatoes
Optional: paprika and/or parsley for garnishment

Prep:
Dice the tomatoes, onions, and garlic
Wash spinach
Thaw chicken (if needed)
Steps:
Grill chicken in pan with butter on medium heat, ~10min, flipping occasionally, until chicken is golden brown on all sides and fond has accumulated at the bottom of the pan but not burned.
Remove chicken from heat and set aside.
In the same pan, add onions, garlic, and butter. Use the liquid from the onions (or add up to 1/4 cup water) to lift the fond from the chicken and integrate with the onions and garlic. Allow the water to evapporate. Cook the onions and garlic until onions have carmelized, about 5min.
Add in the spinach and tomatoes.
Stir until spinach is fully wilted, 2min.
Add in heavy cream while stirring constantly. Add in the cheese immediately after and stir until the cheese has melted and is no longer visible.
Cover and simmer on med-low heat for ~20min, stirring occasionally, until the sauce has darkened in color to a more orange-yellow tint. While simmering, cut chicken into bite-sized chunks ( if desired).
Add chicken back into pan and incorporate evenly into the sauce.
Add salt and pepper to taste.
Remove from heat and serve.
नोट्स
Adding mozzarella will make it gooey but may make it more likely to stick to the bottom. Add italian blend of cheese for a mix of gooey and creamy. Hard cheese (armesian, romano, asiago) for creamy, and softer cheese (mozzarella, ricotta) for gooey/stringy
This recipe can be made with white meat (chicken breasts) or dark meat (chicken thighs). As long as the chicken is cooked through, it doesn't matter.
Substitutions for garlic forms: 1 clove = 1/2 tsp minced = 1 tsp chopped = 1/2 tsp paste = 1/2 tsp flakes = 1/4 tsp granulated
