Kuya's Kettle Corn Frozen Custard

Custard

  • 1 bag popcorn

  • 2 1/2 cup heavy cream

  • 1 1/4 cup whole milk

  • 3 egg yolks

  • 3/4 cup sugar

  • 3/8 tsp salt

Salted Caramel Sauce

  • 2 cup sugar

  • 1 cup water

  • 2 cup heavy cream

  • 7 oz cubed butter room temp

  • 1 tsp salt

Caramel for Popcorn

  • 1 cup butter room temp

  • 1 cup brown sugar

  • 2 tsp vanilla

Due to no directions in the notebook, I am going to take a stab as to how to make this entire thing. Good luck and if there needs to be changes let me know so I can update them accordingly.

Custard

  • In a large sauce pan, heat the popcorn, heavy cream, milk, sugar, and salt until scalding. Once scalding, remove from heat and temper the eggs by slowly pouring the cream mixture in the bowl containing the eggs and whisking. After half the cream mixture has been added, pour everything back into the sauce pan. Continue heating until the mixture can coat the back of a spoon.

  • Pour the mixture through a strainer into another bowl to catch all the bits. Place saran wrap down directly on the top to prevent skins from forming. Cool to room temp then transfer to the fridge until chilled completely.

Caramel for Popcorn (mix-in)

  • Heat brown sugar in a sauce pan until it starts to caramelize. Once it has become liquid, remove from heat and add in the butter slowly and mix until combined. Add in the vanilla.

  • Using an ice cream maker, pour in the cooled custard mixture and let go for 10-15 minutes or until the custard starts to become slightly frozen. Start adding in the cooled caramel for popcorn and let the ice cream maker finish. Transfer to the freezer.

Salted Caramel Sauce

  • Heat sugar and water in a sauce pan until it starts to caramelize and become golden brown or darker. Whisk in the heavy cream. Remove from heat, add in the salt, and slowly add in the butter until incorporated.
