High Protein Sundae Cupcakes

It’s like if a lava cake and an ice cream sundae had a high-protein baby.
These are flourless, have a rich chocolatey vibe, incredibly satisfying - all while delivering some serious protein.
With 80 calories and 7.5 grams of protein per cupcake.
If you want a healthy dessert thats packed with protein and ridiculously easy to make, give these a try.
Here is how I made it:
Cupcake Ingredients:
2 eggs
4 tbsp powdered monkfruit (or sweetener of choice)
3 tbsp cacao powder (use 2-2.5 tbsp if you dont want it as rich)
Splash of vanilla extract
Optional but worth it: a sprinkle of chocolate chips
Frosting Ingredients:
4 tbsp thick greek yogurt
2 tbsp whipped cream cheese (optional but key)
1 ½ tbsp powdered monk fruit or sweetener
Splash of vanilla extract

Blend or process 24oz cottage cheese with 2 eggs, 3 tbsp cacao powder, 4 tbsp powdered monk fruit, and a splash of vanilla extract.
Line a muffin tin with parchment paper cups.You should get 9-10 muffins out of this batter. Dont fill all the way up, as these will rise, then deflate. Leave about 1/2 inch to the top.
Pour in the batter, then sprinkle some chocolate chips on top, if desired, & shake just a bit so it goes inside the batter a touch.
Pop it into the oven and bake at 350°F for 22-25 minutes.
Remove, let cool for 20-30 minutes, then pop into the fridge to cool COMPLETELY. This step is very important. If you dont chill them, the texture will be off.
Make your protein icing by processing 4 tbsp thick greek yogurt with 2 tbsp whipped cream cheese, 1.5 tbsp powdered monk fruit, and a small splash vanilla
Top each of the muffins with 1/2 tbsp or so of the frosting, and sprinkle on some coconut flakes if you want, and enjoy
This is an incredible, easy, high protein dessert thats a great lowcarb treat and its so good.
