Vegan Meat Filling

2 ounces Impossible or Beyond beef crumbles See Notes for options

1/2 small onion, thinly sliced

4 tablespoons low sodium soy sauce

1/4 cup packed brown sugar

1 tablespoon agave

1 tablespoon toasted sesame oil

4 large garlic cloves, minced

1/2 teaspoon ground ginger

1/4 teaspoon dried red chili flakes (optional)

1/4 teaspoon ground black pepper

Manapua Dough

2 cups flour

1 tsp instant yeast

1 tsp baking powder

4 tsp sugar

1 cup warm water

The Vegan Filling

1. In a large nonstick skillet over medium-high heat, add the vegan beef and cook until brown, using a wooden spoon to break it up into small chunks.

2. Once brown and no longer pink, add the sliced onion, soy sauce, brown sugar, agave, sesame oil, garlic, ginger, red chili flakes (if using) and black pepper. Stir well into the vegan beef.

3. Lower the heat to low-medium and continue to cook for 5-10 minutes.

4. Remove from heat and let cool to room tempurature.

Manapua Dough

1. In a large bowl, add in the flour. Create a small well in the flour and add in yeast, baking powder, and sugar.

2. Slowly add in the water while stirring it with a wooden spoon or hand. Transfer the dough to a working surface with flour sprinkled on.

3. With a vertical arm press down with your palm and bring it forward and with the other arm, bring it back. Sprinkle on more flour until the dough can slightly stick. Keep kneading until the dough has become smooth, waxy, soft, and bouncy. Divide the dough into 60g-65g pieces. If you have extra, divide it amongst the other pieces. Then cover it with a plastic wrap to prevent it from air drying.

4. With one divided piece, press it into a flat disc with the outer edges thin and in the middle thick.

5. Stuff the dough with the manapua filling (be sure the filling is at room temperature) and close it on the top while swirling and pinching it. If there is excess dough, pinch it off and it’ll look like a bald head. Round out the Manapua, then set aside and repeat with the other pieces.

***Optional: To have a smoother looking sphere, use a rolling pin. Flatten a piece of dough. Roll it with a rolling pin, fold, and roll. Repeat for 4-5 times then shape it into a circular shape.

Steaming

Line a steamer with parchment paper (see notes if you don't have a steamer) and place the manapua on it. Cover and let it rest for 15-20 minutes.

In the meantime, boil water in a pot large enough to hold the steamer basket. Place the covered steamer over the pot and let it steam for 7-8 minutes. Serve and enjoy!

नोट्स

If you don’t have a steamer, you can improvise by placing three foil balls at the bottom of a pot, setting a heatproof plate on top of them, and adding water to the bottom of the pot, just below the plate.

To steam, heat the water until it boils, then cover the pot with a lid and start the 7–8 minute timer.
