Creamy Yoghurt Chicken Curry

1-2 tbsp cooking oil
1 large onion finely chopped
2 tbsp chopped garlic
1 tsp cumin powder
1 tsp coriander powder
1/2 tsp turmeric powder
1tbsp Kashmiri chilli powder
1 tbsp tomato puree/paste/concetnrate
3-4 large ripe tomatoes finely chopped (or used tinned)
1 tbsp garam masala
1 tbsp kasuri methi
4 chicken breasts, cubed to bite size pieces
Marinade : 1.5 cups greek yoghurt, 1/2 tsp turmeric, salt, black pepper, 1 tbsp garam masala, squeeze of little lemon juice

Mix together the marinade ingredients and marinade the chicken in this yoghurt mix while you make the base
Heat pan, add oil and once hot add the chopped onions, let them tuen light brown in colour, then add the garlic, chopped tomatoes, tomato puree and turmeric powder, coriander powder, cumin powder and Kashmir chilli. add a pinch of salt. Maintain medium heat and continue stirring and cooking to 5-10 mins unwell the oil separates (See video)
Turn heat on low
Add the marinaded chicken to the pan, and mix gently, let this warm up slowly and then bring to a gradual simmer and then cover and cook for 10-15 mins or until the chicken is cooked through
Add the garam masala, kasuri methi and salt, mix well and taste. Cook uncovered for 5 minutes and add a finished touch of a little butter before serving. ENJOY!
