Strawberry Delight

Cake
6 eggs separated
3/4 tsp (2g) vanilla extract
1/2 cup (120ml) whole milk
220g granulated sugar
210g all-purpose flour
14-15g strawberry powder
85g strawberry jello mix
1/2 tsp 3g fine sea salt
1.5 tsp 7g baking powder
White Chocolate Strawberry Ganache (1.5x next time)
15g freeze dried strawberry
5-10g strawberry jello
100g white chocolate
150g heavy cream
Strawberry simple syrup
2 cups (400g) strawberry
1 cup sugar
1 lemon plus some peel
Strawberry puree gelatin
1 cup (200g) strawberry (fresh or frozen)
1/2 cup sugar
Half a lemon juice
7-8g (1 tsbp) gelatin bloomed (maybe try half because it was a little too thick on the gelatin)

Bake 350°F 25-35 minutes
Cake
Separate the egg yolks and whites. In another bowl, mix all the dry ingredients. Grease and flour a 9x13 pan.
Whip the egg whites with some sugar (around 1/3cup at most i think) until stiff peaks form
Beat the egg yolks and sugar until light and fluffy. Add in the milk and vanilla extract until smooth. Fold in the egg whites into the yolk mixture 1/3 at a time until incorporated. Fold in the dry ingredients 1/3 at a time until smooth and incorporated. Be sure not to deflate the mixture too much.
Pour into the pan and tap a couple of times to remove excess bubbles. Bake 350°F for 25-35 minutes.
Ganache
Measure out all ingredients. Put the cream into a suace pan and the other ingredients into a heatproof bowl. Scald the cream and pour over the other ingredients. Wait a minute and stir together. Cool and then whip until light and fluffy.
