Cottage Cheese & Broccoli Breadwich

I’ve made lowcarb bread from zucchini, pickles, jalapeño, and just about everything, but wanted to sneak in a little more protein into this one.
Verdict? You need to try this. The cottage cheese holds things together, the broccoli adds tons of nutrients, and it works perfectly as a sandwich base.
Remember to use a firmer cottage cheese. I used Good Culture. Dont use a watery one, or it won’t work! And make sure you let it COOL.
Here is how I made it:
1.Preheat oven to 400°F. Line a baking sheet with parchment paper and spray lightly with avocado oil.
2.Grab a food processor and process 8oz cottage cheese, 6oz broccoli, 1 egg, 1 tsp smoked paprika, 1 tsp onion powder, and 1 tsp garlic powder until smooth.
3.Spread the mixture into two circles on parchment. Bake 20 to 22 minutes until set. Let cool completely before handling.
4.You can use mayo or any condiment you want. I snuck in some more protein. for the sauce, mix 2 tbsp Greek yogurt, 1 tsp mustard, 1/4 tsp onion powder, 1/4 tsp garlic powder, salt, and pepper.
5.Layer the bread with lettuce leaves, organic turkey slices, fresh tomato, thin red onion, and shaved cucumber. The cucumber is important - it adds such a nice crunch.
6.Cut in half, or diagonal, and enjoy!
