Chocolate Ribbon Cheesecake

Crust

  • 3 cup graham cracker

  • 1 cup butter (melted)

  • 6 tbsp sugar

Filling

  • 1 1/2 lb cream cheese softened

  • 1 cup granulated sugar

  • 1 cup butter (melted)

  • 3 large eggs

  • 1 tsp vanilla

  • 3 oz semi sweet chocolate

Preheat oven to 350F. Combine crumbs w/ 1 cup butter and 6 tbsp sugar. Press into bottom of a 9x13 pan with sling (to help cut if desired).

Melt chocolate on double boiler or microwave and let cool until warm.

Beat cream cheese and sugar until light and fluffy. Add eggs one at a time and then stir in the remaining butter and vanilla.

Pour 1/4 to 1/3 of the cream cheese mixture into the chocolate and mix until incorporated.

Spread half of the plain cheesecake batter on bottom, gently spoon the chocolate batter on top, then spoon the remaining batter until the chocolate is covered completely. Make spiraling cuts through the layers to marble.

Bake for 30-45 minutes or until almost set. (I use a water bath and mom doesn't. Up for the maker to decide on that). Turn off oven and leave inside for 2 hours. Chill completely.

नोट्स

Mom told me that at one point there was a request for more Graham cracker crust. The extra 1 1/2 cup cracker, 1/2 cup butter, and 3 tbsp sugar was for that. I have also decided that since I have always made the cheesecake with 1 cup of melted butter in the batter to keep that instead of the original recipe used by mom/cookbook we got it from.
