Stress-free Curry

Main:
4 chicken breasts, cut into large chunks
1 white onion, cut into chunks
3 garlic cloves, crushed
1 red pepper, cut into chunks
1 green pepper, cut into chunks
2 tomatoes, quartered
1 red chilli, roughly chopped
1-inch piece of ginger, roughly chopped
Spices & Oils:
2 tbsp garam masala
1 tbsp paprika
2 tbsp medium curry powder
3 tbsp olive oil
25g butter
Salt and pepper, to taste
For the Sauce:
2 tbsp plain flour
1 tbsp ground almonds
2 tbsp curry powder
400ml chicken stock
100ml cream
2 star anise
2 bay leaves
Fresh coriander, to serve

Combine all main ingredients and spices in a large casserole pot.
Cover and bake in a preheated oven at 180°C (160°C fan) / Gas mark 4 for 30 minutes.
Remove the chicken pieces and set aside.
Place the pot with the vegetables on the hob over medium heat.
Stir in the flour until combined.
Add ground almonds and mix well.
Stir in the curry powder, then pour in the chicken stock and cream.
Bring the mixture to a gentle simmer.
Use a stick blender to blend the sauce until smooth.
Return the chicken to the sauce and heat through.
Add the star anise and bay leaves.
Simmer for 20 minutes, stirring regularly. The sauce will deepen in colour and flavour the longer it cooks.
Taste and season with salt and pepper.
Remove the bay leaves and star anise before serving.
Serve with rice and garnish with fresh coriander.
