Honey Chicken Halloumi Pasta

Ingredients for 1:
120g of chicken breast
1/2 an onion
20g light halloumi
15g light cheese
1 tsp of lightest cream cheese
1/4 cup of low fat milk
1 tsp of honey
1 tbsp of chilli jam or sweet chilli
Pinch of Parsley
Paprika/salt/pepper/chilli flakes
120g cooked rigatoni
1 handful of spinach
Instructions
slice the chicken and onion and fry for a couple of mins in a dash of paprika/salt/pepper.
cook the pasta according to instructions
add the cream cheese, milk, rigatoni pasta, honey, sweet chilli, chilli flakes, spinach and cheese.
Stir on a low heat. If you want more sauce, add a splash of hot water fry the halloumi and add it on top with the parsley
Tips/ comments:
Add more honey if you want a sweeter taste
use a low fat milk like skimmed or light soy milk
if there’s not enough sauce, add a splash of boiling water.
Or if it’s too runny, keep stirring on the hob until it condenses. You can always add a pinch of flour if needed
