2 lbs ground meat
1 onion, chopped
4 cloves garlic chopped
1 shallot, chopped
2 jalapenos, chopped
1 large can crushed tomatoes
1 can kidney beans drained
1 can corn drained
1 can beer
1 can chicken broth
1 tsp liquid smoke
1 tsp brown sugar
1 tbsp fennel seed
2 tbsp cumin
2 tbsp chili powder
1/4 cup vinegar
Salt & pepper to taste
Hot sauce to taste
Two pours olive oil
On the side:
Shredded cheese
Tortilla chips
Sour cream
Instructions
Put a large pot on stove over medium heat. Warm oil.
Once hot, add onions, garlic, jalapenos, and shallot and stir them until soft.
Add ground meat. Salt and pepper the meat in the pot. Sautee meat until good and brown.
Add tomatoes, beans, corn, beer, broth, liquid smoke, brown sugar, cumin, chili powder, fennel seed, vinegar, and hot sauce.
Bring to a simmer. Half cover the pot and leave it on low to medium heat for 3-4 hours, stirring occasionally.
Liquid in the pot should reduce to a thick stew. Serves about 8.
