Monica's Rice Pilaf

Ingrédients

1 (4 oz.) box wild rice

1/2 to 1/3 cup brown rice

2 1/4 cups water

1 T. instant bouillon

1 1/2 cup mushrooms

1 1/2 cup celery

1/4 cup margarine

1/4 cup green onion

2 T. (2 oz. jar) pimento chopped

1 tsp. lemon rind

1 T. lemon juice

1/2 tsp. thyme

1/2 tsp. salt

1/8 tsp. pepper

Instructions

• Cook rice with bouillon, but do not overcook.

Sauté mushrooms, in margarine and then add celery and on- ions.

Add rice and remaining ingre- • dients. Heat and serve. May be made in advance and can be frozen. We like this with skewered chicken.
