Healthy Snickers Ice Cream Cups

These “cheat’s” ice cream snickers yogurt cups are a great healthy summer snack, high in protein and no refined sugar! And the date caramel is so delicious and lovely on pancakes or with overnight oats too!

Just store them in the freezer and thaw for a minute before eating, my kids love them too!

I also use good quality ingredients, I’ve mentioned my faves.

Ingredients: Makes 24 cups

240g Greek yogurt (@gleniskyogurt)

100g peanut butter (organic @meridianfoods)

1-2 tbs manuka honey (@boynevalleyhoney)

OR chicory root syrup @homespun

1 tsp vanilla extract

130g dark chocolate, melted

1 tsp coconut oil (optional)

30g peanuts, crushed

For the date caramel:

16 large dates

1 tsp vanilla extract

pinch salt

1/2 cup of unsweetened almond milk

Instructions

Soak the dates in boiling water for at least 10 minutes.

Mix together the yogurt, peanut butter and honey and spoon into your silicone mould, approximately 1 heaped tsp per mould, and pop them into the freezer while you make the caramel layer.

Using a blender, add the dates, salt, vanilla and almond milk and blitz until smooth, if it’s too thick add a little extra almond milk to get a caramel consistency.

Then spoon in 1 tsp of the caramel on top of the yogurt mix and pop back in freezer.

Melt the dark chocolate and add a little coconut oil if needed to make it more runny.

Then add a tsp of the melted chocolate on top of the caramel layer and sprinkle on the nuts before its hardens!

Pop them back into the freezer, ideally overnight, and when ready to serve, remove the yogurt cups from the moulds and let thaw for a couple of minutes and enjoy!
