4 Medium Eggs “ Set aside the Yolk “

1 Medium Red Bell Pepper

1 Medium Onion

1 TSP

Smoked Paprika

1 TBSP

Olive Oil

1 TSP

Salt

1 TBSP

Black Pepper

1 TBSP

Fresh Parsley

Instructions

1.

Stir the egg whites until they are slightly frothy.

2.

Add the diced red bell pepper, green bell pepper, onion, smoked paprika, salt, black pepper, and chopped parsley to the bowl with the egg whites.

3.

Heat the olive oil in a non-stick skillet over medium heat.

4.

Once the oil heated, pour the egg white mixture into the skillet and cook undisturbed for 2-3 minutes until the edges start to set.

5.

Reduce heat to low and cover the skillet with a lid. Cook for an additional 3 - 5 minutes until the frittata is set in the center.

6.

Remove the skillet from the heat and let it cool for a minute before slicing.
